The history of Żubrówka began back in the 15th century. Even then, the Polish nobility liked to add a blade of bison grass to their booze. This was to enhance the taste, but not only. For centuries ago, it was believed that bison grass was… an aphrodisiac that gave the bison’s strength and energy.
Today, Żubrówka is our national pride and showpiece, best proven by the numerous awards won at prestigious competitions and trade fairs. Aromatized with bison grass, this vodka with a strong forest aroma is a Polish export commodity.
Żubrówka is a folk term under which two species of grasses are hidden: sweet-scented turówka and forest turówka. They grow in north-eastern Poland, particularly in the Białowieża Forest. They are small plants, 40 to 60 cm in height, with a characteristic, strong smell of coumarin – a substance with the aroma of fresh hay, honey and bison hair. The coumarin leaves a kind of white meal on the stems, which can be rubbed off with a fingernail.
The plant only grows wild, in natural conditions. Harvesting begins as early as mid-June and continues until October. In summer, the grass is juicy green and very fresh. It does not produce seeds, so it can be harvested. For legal harvesting, you need a permit from the Department of the Environment Protection, which is renewed every year.
