Irish Whiskey Bonding Company is inspired by the historic tradition of Irish whiskey bonders from the 19th and early 20th centuries, when merchants and retailers aged, blended and bottled whiskey sourced as unbranded “new make” spirit from distilleries. The company aims to revive that golden age by producing handcrafted blended Irish whiskeys that reflect the character of Belfast and the art of bonding. Our approach is to blend and mature spirit in the spirit of those original bonders, creating distinctive whiskeys that honor tradition while bringing the practice back to life today.

The Chancer – Peated Small Batch Irish Whiskey is a premium blend of 5 Irish Whiskeys including, Shortcross Peated Single Malt Irish Whiskey, triple and double distilled malt alongside pot still and grain.  Aged in ex-bourbon, sherry casks and virgin American Oak.

Irish Whiskey Bonding Company Chancer Peated Small Batch Irish Whiskey is a lightly peated blended Irish whiskey bottled at 43% ABV, bringing together peated single malt with a mix of malt, pot still, and grain whiskeys matured in ex-bourbon, sherry, and virgin American oak casks. The aroma shows soft wafts of peat smoke layered with sweet grains, gentle fruit, honey, and subtle spice. On the palate, restrained smokiness is balanced by flavors of ripe stone fruit, vanilla, and dried herbs, with a touch of citrus sweetness and warming oak spice. The finish is medium to long, drying and gently smoky, with lingering oak and spice, making it approachable and well-balanced rather than heavily peated.
