Nestled in the sun-washed hills of Contrada Torri in Torano Nuovo, deep in the Abruzzo province of Teramo, Barone Cornacchia’s Casanova estate is a quietly exceptional address for those who know where to look. Perched at 250 meters above sea level on calcareous, stony soils that stress the vine in all the right ways, this certified organic and vegan property has dedicated itself to showcasing the Pecorino grape with honesty, precision, and a profound sense of place. Long overlooked in favor of more internationally famous Italian whites, Pecorino has in recent decades earned its rightful reputation as one of central Italy’s most thrilling indigenous varieties, and Casanova’s interpretation stands as a compelling argument for why.
The Casanova Pecorino is crafted entirely from 100% Pecorino grapes, hand-harvested in the first half of September from densely planted vines yielding just 80 to 90 quintals per hectare. After destemming and soft pressing, the must undergoes a cold static decant at 8°C for 24 hours before fermentation is carried out in stainless steel at a carefully controlled 16–18°C, preserving every nuance of the grape’s naturally expressive aromatic profile. Following fermentation, the wine rests on its own lees for two months with weekly stirring, adding texture and depth before bottling in January. The result is a wine that is certified organic, vegan, and unmistakably Italian, structured, mineral, and built with quiet confidence.
The Casanova Pecorino pours a luminous straw yellow with warm golden highlights that shimmer with Mediterranean sunshine.
