Barro de Cobre Ensamble Mezcal
Barro de Cobre is a mezcal built on patience and tradition, doing things the right way from the very beginning. What sets it apart is a one-of-a-kind dual distillation process, first through a clay pot still, then through a copper pot still, a method Barro de Cobre pioneered and from which it draws its name. The result is a spirit that is bold yet refined, earthy yet remarkably smooth.
The Ensamble expression brings together two iconic agave varieties, Espadín and Tobalá, and is the first mezcal to propose a blend of distillation methods. The ancestral character of clay distillation imparts its fine, rustic qualities directly into the copper-distilled portion, lending a smoothness to the final spirit that is truly one of a kind.
Production begins with harvested piñas roasted in traditional outdoor stone pit ovens, developing deep earthy and smoky character. The cooked agave is then ground by an ox-drawn tahona stone, fermented in open wooden vats using only native wild yeasts, and distilled in both clay and copper stills. Every bottle takes 504 hours to produce and is filled and labeled entirely by hand.
