George Dickel Elma Wine & Liquor Single Barrel Select Whiskey
Born 40 years after the signing of the Declaration of Independence, George A. Dickel was an established Nashville merchant when he entered the whisky business. Dickel grew his reputation for selling the smoothest, most mellow spirits in the region.
Thus, Geo. A. Dickel & Co. was born and when the Cascade Hollow Distillery opened in 1878 in neighboring Coffee County, George Dickel bought a large share. George Dickel followed in the Scottish tradition of spelling whisky without an “e.”
George Dickel preferred whisky made in the winter months more than summer months because he felt it made the whisky taste smoother, so the company began advertising their Tennessee Whisky as “Mellow as Moonlight.” This is why our whisky is chilled before undergoing the charcoal-mellow filtration known as the Lincoln County Process. This extra step smooths out the flavor and we’re still the only Tennessee distillery to do it.
George Dickel Elma Wine & Liquor Single Barrel Select Whiskey is aged at least 15 years and was hand selected by the staff and customers of Elma Wine & Liquor. This bottle is limited and irreplaceable.
This time we have something truly special. While the label and hang tags read “Aged at least 15 years”, our barrel actually rested for more than 18 years. The barrel number tells the story — ours is #07D03, meaning the whiskey was first filled on April 3, 2007, and bottled in April of 2025. That makes this Single Barrel Select 18 years old (plus a few days), a rare find at this price point. Bottled at 96.2°, it is bold, mature, and classic Tennessee whiskey at its best.
In the glass, it shows a striking honey amber color. The nose opens with old oak reminiscent of a rickhouse, layered with caramel, warm spice, vanilla, apple, and citrus. The palate is oily and coating, delivering dusty oak, caramel, and vanilla, accented by cherry and peppery spice. The finish is smooth and persistent, medium to long, leaving lingering impressions of cherry and spice.
