In ancient times, the land around Yilan was called Kavalan, a mysterious land that was solely inhabited by the indigenous people of the Kavalan clan. The name was officially recognized by the emperor of the Chin dynasty in the year of 1809 when the original city was also built under the same name. Kavalan had always been kept primitive and protected from the outside world by the Syue-shan mountain range which is abundant in high quality natural water that comes from deep within the mountain range. The mists of Kavalan and the spirits of the past have been created for you in the exquisite whisky.

Kavalan is Taiwan’s pioneering single malt distillery, founded in 2005 in Yuanshan, Yilan County, where subtropical heat and humidity drive an accelerated maturation unlike anything found in traditional whisky-producing regions. Angel’s share losses run steep in this climate, but the payoff is spirit that develops remarkable depth and complexity in a fraction of the time a Scottish distillery would need.

The Solist series showcases single casks bottled at cask strength, unfiltered and uncut, letting each barrel’s character speak for itself. This expression spent its life in a former Amontillado sherry cask. Amontillado sits between Fino and Oloroso in style, aged first under a protective layer of flor yeast before being exposed to oxidation, and that dual process leaves a signature of toasted nuts and dried fruit that carries straight through into the whisky.

• COLOR: Rich auburn.
• AROMA: Multi-layered and fruity, with dried figs, sweet and sour plum, a delicate floral lift of peony, hazelnut, almond, and light toffee over an oaky base.
• PALATE: Cherry and baked apple pie, coffee, cinnamon, and caramel.
• FINISH: Long and elegant, with lingering nuttiness and a spicy pepper edge.
• TASTING NOTE: Best enjoyed neat. Also pairs well with ice cream.
