Description
Kavalan Solist Whisky PX Pedro Ximenez Sherry Single Cask
In ancient times, the land around Yilan was called Kavalan, a mysterious land that was solely inhabited by the indigenous people of the Kavalan clan. The name was officially recognized by the emperor of the Chin dynasty in the year of 1809 when the original city was also built under the same name. Kavalan had always been kept primitive and protected from the outside world by the Syue-shan mountain range which is abundant in high quality natural water that comes from deep within the mountain range. The mists of Kavalan and the spirits of the past have been created for you in the exquisite whisky.
Kavalan is Taiwan’s pioneering single malt distillery, founded in 2005 in Yuanshan, Yilan County, where subtropical heat and humidity drive an accelerated maturation unlike anything found in traditional whisky-producing regions. That intense climate means faster extraction from the wood and bolder, more concentrated character in a fraction of the time a Scottish distillery would need.
The Solist series showcases single casks bottled at cask strength, unfiltered and uncut, letting each barrel’s character speak for itself. This expression spent its life in a former Pedro Ximénez sherry cask. PX is often called the king of sherries for its deep, syrupy sweetness, made from sun-dried grapes that concentrate their sugars before fermentation, and that richness carries straight through into the whisky as dark fruit, chocolate, and honeyed sweetness.
