Savage & Cooke Cask Finished Bourbon Whiskey
Savage & Cooke Cask Finished Bourbon starts with grain grown within 50 miles of the Mare Island distillery, mostly yellow corn with rye and malted barley. The whole kernels are milled and mashed on site, then distilled in the distillery’s Vendome copper column still. Five batches are blended together for consistency before the bourbon goes into hand-crafted White American Oak Char #3 barrels made by cooper Seguin Moreau, where it ages a minimum of three years. Once Master Distiller Jordan Via judges it ready, a portion moves into Dave Phinney’s own Cabernet Sauvignon barrels from Napa Valley for about two months of finishing, adding depth and a layer of soft fruit character. The water is drawn from a spring on Phinney’s high-elevation Alexander Valley property.
