Savage & Cooke Cask Finished Rye Whiskey
Savage & Cooke Cask Finished Rye begins with grain grown within 50 miles of the Mare Island distillery, led by rye with corn and malted barley rounding out the mash bill (51% rye, 45% corn, 4% malted barley). Whole kernels are milled and mashed on site, then distilled in the distillery’s Vendome copper column still, with five batches blended together for consistency before barreling. The rye ages a minimum of three years in hand-crafted White American Oak Char #3 barrels from cooper Seguin Moreau. Once Master Distiller Jordan Via deems it mature, a portion is transferred into Dave Phinney’s own Grenache barrels for about two months of finishing, layering in extra flavor and texture. Water comes from a spring on Phinney’s high-elevation Alexander Valley property.
