Savage & Cooke Cask Strength American Whiskey grows out of Dave Phinney’s move from wine into spirits, brought to life at the Savage & Cooke distillery on Mare Island in Vallejo, California. Phinney, known for The Prisoner and Orin Swift wines, teamed up with Master Distiller Jordan Via to build a whiskey with a distinctly Californian point of view.
The whiskey starts as a corn-forward American whiskey, aged for a minimum of four years in ex-bourbon barrels across the distillery’s three aging locations, each offering different conditions of temperature, humidity, sunlight, and airflow. Once Via judges it ready, a portion is transferred into Phinney’s own Zinfandel barrels for roughly two months of finishing, a step that layers in the character of those wine casks. The water used comes from a spring on Phinney’s high-elevation property in Alexander Valley. The result is bottled unadulterated, at full cask strength.
