Apollo’s Praise Dry Riesling Lahoma Vineyard
Apollo’s Praise built its Dry Riesling around Lahoma Vineyard, drawing fruit from three favorite hills on the estate for this variety. The wine leans on an east west block known as The Long Rows, which makes up the bulk of the blend and benefits from strong air drainage that lets fruit character develop later into the season. Small additional harvests from the Pentecostal Block and The Knoll rounded out the wine, adding palate weight and depth to the final blend.
In the cellar, the grapes spent three to five days cold soaking on the skins before pressing, a step aimed at pulling maximum ripeness and texture from the fruit. Fermentation took place across a mix of neutral barriques and small tanks, using both wild yeast and a cultivated strain, which layered in extra structural complexity over two to three months. The wine then rested on its lees until February before being racked, filtered, and bottled, resulting in a Riesling that drinks well young but is built to age.
