Bacchus Cabernet Sauvignon
Bacchus wines carry a pedigree unlike almost anything else at their price point. The label was created by David Gordon, one of New York City’s first recognized sommeliers and the man behind the Wine Spectator Grand Award winning wine list at the legendary Tribeca Grill in Manhattan, the iconic restaurant founded in 1990 by restaurateur Drew Nieporent and actor Robert DeNiro. Gordon is self-taught, having come up in the 1980s at a time when wine education in America was still in its infancy, when learning meant picking up a book or a magazine rather than watching a YouTube tutorial. Over the decades he built one of the most celebrated restaurant wine programs in the country, a list now boasting over 1,800 selections including verticals of some of the most coveted producers on earth.
Through all of that, Gordon never lost sight of the everyday wine drinker. He launched the Bacchus label as a passion project rooted in a simple promise: affordable, delicious wines made with genuine craft and no pretension. Named for the Roman god of wine himself, the bottles that carry this label are, much like Gordon, welcoming and unpretentious. Early cuvées were produced with the help of friends at Caymus, Lewis Cellars, and Miner Family, and that tradition of genuine quality has carried through to every vintage since.
The 2023 Cabernet Sauvignon is sourced from a blend of 75% Paso Robles and 25% Central Coast fruit, combining the warm, generous ripeness of Paso with the freshness and structure of the broader Central Coast appellation. Ninety percent Cabernet Sauvignon with a touch of Merlot for softness and roundness, it is certified sustainable and vinified in equal parts stainless steel and neutral oak before spending ten months in neutral barrels, a process designed to let the fruit speak without the distraction of heavy wood influence.
The wine pours a deep, rich ruby. On the nose it opens with inviting aromas of ripe plum, black currant, and fresh blackberry, lifted by a subtle cool mint note that adds elegance and intrigue. On the palate it is medium bodied, juicy, and approachable, with those same ripe dark fruit flavors layered over hints of cedar and dusty earth that emerge beautifully on the mid-palate. The tannins are velvety and polished, the finish balanced and satisfying. Exactly what Gordon always set out to make, ripe fruit, a clean taste, not too oaky, not too tannic. A wine for before dinner, during dinner, or whenever the moment calls.
