The Valpolicella Ripasso Tradition
Ripasso is one of the most distinctive winemaking techniques of the Valpolicella region. After the initial fermentation, the young Valpolicella wine is passed over the remaining grape skins from Amarone or Recioto production. This second contact extracts additional color, tannin, and aromatic complexity, giving the wine greater richness and structure while still preserving the freshness typical of Valpolicella.
The result is often referred to as a “baby Amarone,” offering depth and character while remaining approachable and versatile at the table.
Vineyard & Production
The grapes for this Ripasso Superiore come from estate vineyards located around 600 meters above sea level, where cooler temperatures allow the fruit to ripen slowly while maintaining natural acidity.
Following harvest, the grapes undergo a natural drying period of approximately 60 days, concentrating flavor and structure. Fermentation takes place over 20 days in stainless steel tanks, after which the wine undergoes the traditional Ripasso process with Amarone and Recioto skins.
The wine is then aged for 12 months in French oak tonneaux (500L barrels) followed by an additional 6 months of bottle aging, allowing the flavors to integrate and develop complexity.
Grape Composition
This blend highlights the traditional varieties of Valpolicella: Corvina (60%), Corvinone (20%), Rondinella (15%), and Oseleta (5%). Together these grapes create a wine with deep color, vibrant aromatics, and a balance of ripe fruit and savory spice.
Technical Details
The vineyards are planted in calcareous alluvial soils with a gravel texture, which provide excellent drainage and contribute to the wine’s aromatic lift and mineral backbone. The vines sit at approximately 600 meters above sea level, helping preserve freshness and balance. The grapes are naturally dried for around 60 days, followed by 20 days of fermentation in stainless steel tanks. After the Ripasso process, the wine is aged for 12 months in French oak tonneaux (500L) and an additional 6 months in bottle before release.
