Casale Vallechiesa is one of the most innovative wineries in the Lazio region, with over a century of experience producing indigenous and sustainable volcanic wines. Located in the Frascati province of Rome, the winery continues to evolve, combining tradition with forward-thinking practices that highlight the distinctive terroir of the region.

Casale Vallechiesa is currently undergoing organic conversion, reinforcing its commitment to sustainable viticulture and the preservation of Lazio’s volcanic landscape. The grapes are sourced from the estate’s Vigneti di Santa Croce vineyard, a site composed of volcanic soils rich in potassium, magnesium, and phosphorus salts. The vineyard enjoys southern exposure toward Rome, allowing optimal ripening, and is trained in the Guyot method to ensure balanced fruit quality and canopy control.

Winemaking

The grapes are hand-harvested in the second half of October to ensure optimal ripeness. Following harvest, a 48-hour cryomaceration at 10 °C enhances color and aroma extraction. Fermentation proceeds at 22 °C with gentle pump-overs, and the wine is racked after six days of maceration. Aging and refinement take place in stainless-steel tanks, preserving the purity of fruit and the authentic Cesanese expression.

Deep red in color, this Cesanese opens with enticing aromas of forest fruits, wood, and earthy undertones, accented by subtle hints of leather and tobacco. The palate is soft, round, and velvety, delivering generous fruit framed by balanced, well-integrated tannins. The texture is supple yet structured, offering a harmonious profile that reflects the warmth of Lazio’s volcanic soils and the grape’s natural elegance.
