Cooper Hill Willamette Valley Pinot Noir
Cooper Hill by Cooper Mountain Vineyards encapsulates the essence of Willamette Valley, made with grapes sourced from Cooper Mountain’s certified organic and biodynamic estate vineyards. With this idea in mind, Cooper Mountain has crafted a wine that truly represents the region’s terroir.
The grapes for the Cooper Hill Pinot Noir are grown in the 48-acre Farmington Vineyard/Johnson School which was planted in 1995. The rich sediments found in the vineyard’s fertile and well-draining alluvial soils are ideally suited for Cooper Mountain’s Cooper Hill Pinot Noir.
Organically grown and biodynamic, Cooper Hill Pinot Noir is fermented with native yeast. No additives or fining agents are used in crafting this wine. On south-facing slopes at 250 to 350 feet elevation, grapes receive ideal growing conditions resulting in fully ripened Pinot Noir that maintains freshness. The grapes are fermented in 5-ton fermenters with regular punch downs for gentle extraction of flavors, color and tannins. Once complete, the wine matures for approximately 10 months in 70% stainless steel and 30% French oak prior to bottling. The resulting wine is beautifully balanced and expressive, with a dry yet fruity and supple finish.
This Pinot Noir offers delightful dark berry and pomegranate notes laced with earth and cola, delivering a dry but fruity, fresh and supple organic and biodynamic Pinot Noir. It pairs beautifully with beef, duck, chicken, salmon, or lamb.
