Description
Ferrari-Carano PreVail West Face Red Blend
Don and Rhonda Carano, natives of Reno, Nevada, and second generation Italian-Americans, founded Ferrari-Carano in 1981. Don and Rhonda were introduced to the beauty of Northern Sonoma County in 1979 while searching for wines to enhance the wine lists at the Eldorado, their hotel casino in Reno. They eventually purchased a 60-acre parcel in the Alexander Valley, and realizing the potential for the area, began to acquire additional vineyard land. Ground was broken for Ferrari-Carano Winery in Dry Creek Valley in 1985.
Ferrari-Carano has always been a leading producer of world-class, nationally-acclaimed wines. Vintage after vintage, the wines exhibit a remarkable consistency of style and elegance. Ferrari-Carano’s uncompromising commitment to quality and excellence is a reflection of the desire to produce memorable wines that enhance the pleasures of gracious entertaining.
Aromas and flavors
PreVail West Face is an exquisite, full-bodied wine with aromas of toffee, cassis, blackberry, mocha, nutmeg and vanilla. On the palate, plum galette, baking spice and a touch of leather provide layers of interest supported by ample tannin. This wine’s bold profile will continue to evolve and age beautifully.
Food pairings
PreVail West Face pairs well with braised, roasted or barbecued meats such as chicken, red meat, lamb or pork. Pastas, stews or well-aged medium and strong-flavored cheeses, such as Taleggio, also pair nicely.
How it’s made
The grapes are hand harvested, and upon entering the winery, hand sorted and then gravity fed directly into oak and stainless steel tanks for five days of cold soaking. Following the cold soak, yeast is added and pump overs commence, one to two times daily, for the duration of primary fermentation. After primary fermentation, the wine is drained and pressed for malolactic fermentation, then aged in the wine caves for 18 months.
The vintage
Although we experienced an unusually rainy period in April, drought conditions in Sonoma county continued in 2021, with most of the annual precipitation landing in October and December, 2020. Spring temperatures were cooler, with bud break occurring one week later than average, while summer temperatures were above average with less nightly fog and cloud cover. With minimal irrigation, the grapes were ready for harvesting near the average pick dates for Bordeaux varieties.
