Vieni Estates Red Trillium Ripasso Red Blend
Vieni means “welcome” in Italian, and that spirit of warmth and hospitality runs through everything at this 240 acre estate perched on the edge of the Niagara Escarpment. Master winemaker Mauro Salvador draws on Italian winemaking tradition while honouring the unique character of Ontario’s Niagara Peninsula, producing a broad range of still wines, sparkling wines, and spirits that reflect both the land and the craft. From the beginning, Vieni has been committed to sustainable farming, tilling weeds back into the soil rather than using herbicides, and relying on geothermal cellars that require no artificial heating or cooling year round.
Vieni Estates’ Red Trillium Ripasso is a love letter to both Italian winemaking tradition and the natural beauty of Ontario’s Niagara Peninsula. The wine takes its name from the rare Red Trillium flower, a close relation to the Great White Trillium , the provincial flower of Ontario, which the founder of Vieni Estates would often discover along the Bruce Trail on their lands.
Crafted using the traditional Ripasso method, the 2021 blend of Pinot Noir, Gamay Noir, Merlot, and Rondinella is “re-passed” over the freshly dried grape skins of their Appassimento wine, still rich in sugars and tannins. The wine remains in contact with the pomace for approximately ten days during this second fermentation, drawing additional colour, aroma, and depth from the process. Yields were kept deliberately low across the Vinemount Ridge appellation, while above-average temperatures in late summer and fall delivered ideal ripening conditions, producing remarkable color and higher sugars, most notably in the Pinot Noir.
