The Distillery
The family-run distillery of Cascahuin (NOM 1123) has traditions dating back to 1904 and is under the watchful eye of Master Distiller Don Salvador Rosales Torres. Along with his sons Salvador (“Chava”), and Benjamin, the Rosales family creates some of the finest tequila on earth. We are proud to partner with this family distillery where tradition, sustainability, and quality matter. And we are honored to help tell their story to a new breed of conscious consumers (NOM 1123).
Tasting Notes
This category-defining añejo tequila is bottled at a bold 94 proof (47% ABV) and presents a luminous straw color with thick, viscous legs that hint at its depth and quality. Crafted by Master Distiller Salvador Rosales Trejo, “Chava,” the agave is slow-roasted for 72 hours in small brick ovens, extracted using a combination of traditional stone tahona and roller mill, and naturally fermented with agave fibers before being distilled twice in small stainless steel and copper pot stills. Aged for one year in ex-bourbon barrels, it opens with an elegant aromatic bouquet of delicate florals, raw honey, fresh tarragon, and subtle cinnamon. On the palate, a beautifully layered harmony unfolds, featuring cooked agave, golden raisins, warm spices, candied ginger, and rich dates that continue to evolve as the tequila opens in the glass, delivering a complex, refined, and truly artisanal sipping experience.
