This is a classic mountain Cabernet, grown on hillsides overlooking the sun-drenched valley below. Cooler temperatures and volcanic soils at elevation give the wine natural acidity alongside intense fruit concentration, and the result is a wine with real dark fruit intensity that finishes with firm tannins and an elegant, concentrated structure only mountain fruit delivers. It’s built for the cellar, with a ten-year aging window ahead of it, and limited to just 500 cases of the 2023 vintage. It pairs well with Manchego cheese, guava sticky ribs, or dark chocolate desserts.
